Production took off after the Mexican Revolution, and Mexico is now the largest exporter of organic coffees in the world. Mexican coffee typically comes from high altitudes of at least 4,000 feet. This high grown coffee, or altura, in Spanish, lets seeds develop into hard and dense coffee beans. Most high grown Mexican coffee beans are light-bodied with a mild acidity, and excellent choices for blending.
